               Salad comes from the Latin word “herba salta” or “salted herbs.”   We’ve come a long way since serving salted herbs—what with bean-salads, dessert-salads, meat-salads, slaw-salads, grain-salads, warm-salads, pickled-salads, layered-salads, fruit-salads, vegetable-salads, lettuce-salads, gelatin-salads, pasta-salads, and of course, potato-salad.  Salt is no longer the “dressing” of choice, either, there are dozens of recipes for salad dressings and toppings.  Salad, once considered lady-fare, is now a dish that often contains all food groups.
