This is a hard little cookie—perfect for dipping in milk or hot chocolate.

 

Refrigerator Cookies

 

2 cups brown sugar

1 cup shortening

2 tsp vanilla

2 eggs

1 tsp soda

½ tsp salt

3 ½ cups flour

1 cup chopped nuts

 

Cream brown sugar and shortening.  Add vanilla and eggs.  Add dry ingredients and nuts.  Shape into a hard loaf and wrap in wax paper or plastic wrap.  Store in refrigerator and cut into thin slices and bake at 375 degrees until golden brown.  This dough will store several days in the refrigerator so that you can freshly bake a few at a time.
